- Setting behaviour. Gelatin sets on cooling and can take a day or more to cure fully. Pectin sets chemically, which changes the depositing window and how quickly the line can turn over.
- Heat and acid tolerance. Pectin systems are sensitive to pH and calcium; gelatin degrades if held hot too long. Both constrain what actives you can carry and at what point they are added.
- Mouthfeel expectation. A consumer expecting a gelatin chew will read a pectin gummy as a different product. If you are reformulating an existing SKU from gelatin to pectin, treat it as a relaunch rather than a substitution.

Other systems exist — starch, carrageenan, and blends — but gelatin and pectin cover the overwhelming majority of export gummy work. Decide this before sampling. Changing the gelling system after approval is a new development, not a revision.
Depositing, moulds, and where your unit cost is set
Modern gummy production is a depositing process. Cooked slurry is metered into moulds, cured, demoulded, then finished. Two mould approaches dominate: starch mogul, where impressions are formed in a bed of starch powder, and silicone or steel depositing, where the mould is a tooled cavity plate.
Starch mogul handles complex shapes and high volume economically, but the starch bed contacts the product and adds a drying stage. Cavity depositing gives sharper definition, better surface finish and easier allergen control, and it is usually the route for multi-colour or layered pieces. The choice affects tooling cost, changeover time and the minimum sensible run length.
Three specification points do most of the work here:
- Piece weight and cavity count. Piece weight determines how much active each gummy can carry and therefore the serving size printed on your label. Change one and you change the other.
- Shape complexity. Undercuts, thin sections and fine detail raise demould failure rates. A bear is not the same manufacturing problem as a flat disc.
- Finish. Sugar sanding, sour sanding, oil polish or a plain demould finish each change the appearance, the eating experience and how the piece behaves in a bottle over time.
Ask which route the factory is quoting and why, and ask who owns the tooling. Tooling ownership is a contract question, not a technical one, and it is far easier to settle before the mould is cut. Actives, overage, and the cooking window
This is where supplement gummies stop being confectionery. Your actives have to survive cooking, depositing, curing and then months of shelf life, and they degrade at different rates. Overage is a formulation decision with cost and compliance consequences. Too little and the product falls below claim before expiry. Certification in food manufacturing is scope-bound, and scope is where most buyers stop reading too early. A quality certificate that does not name your dosage form does not cover your product.
